A rich and moist Molasses Date Cake with toasted walnuts and a refreshing citrus syrup, perfect for any occasion.

- 200g pitted dates, chopped
- 1 tsp baking soda
- 240ml boiling water
- 150g unsalted butter, softened
- 180g dark brown sugar
- 2 large eggs
- 200g plain flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 100g toasted walnuts, chopped
- 3 tbsp molasses
- Zest and juice of 1 lemon
- Zest and juice of 1 orange
- 100g granulated sugar
- 100ml water
- Zest and juice of 1 orange
- Zest and juice of 1 lemon
Instructions
- Preheat your oven to 175°C (350°F) and prepare a 22cm round cake tin by greasing and lining it with parchment paper.
- Sift together the plain flour, baking powder, ground cinnamon, and ground nutmeg in a medium bowl.
- Cream the softened unsalted butter and dark brown sugar in a large mixing bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the molasses and date mixture.
- Gradually fold the dry ingredients into the wet mixture and stir in the chopped toasted walnuts.
- Pour the batter into the prepared cake tin and smooth the top. Bake for 40-45 minutes, checking for doneness with a skewer.
- While the cake is baking, prepare the citrus syrup by combining granulated sugar, water, and the zest and juice of both the lemon and orange in a saucepan. Bring to a boil, then simmer for about 10 minutes.
- Once the cake is baked, prick the surface with a skewer and pour the warm citrus syrup over it. Allow the cake to cool completely in the tin before transferring it to a serving plate.
