Description

A rich and moist Molasses Date Cake with toasted walnuts and a refreshing citrus syrup, perfect for any occasion.


Ingredients

  • 200g pitted dates, chopped
  • 1 tsp baking soda
  • 240ml boiling water
  • 150g unsalted butter, softened
  • 180g dark brown sugar
  • 2 large eggs
  • 200g plain flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 100g toasted walnuts, chopped
  • 3 tbsp molasses
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 100g granulated sugar
  • 100ml water
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare a 22cm round cake tin by greasing and lining it with parchment paper.
  2. Sift together the plain flour, baking powder, ground cinnamon, and ground nutmeg in a medium bowl.
  3. Cream the softened unsalted butter and dark brown sugar in a large mixing bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the molasses and date mixture.
  4. Gradually fold the dry ingredients into the wet mixture and stir in the chopped toasted walnuts.
  5. Pour the batter into the prepared cake tin and smooth the top. Bake for 40-45 minutes, checking for doneness with a skewer.
  6. While the cake is baking, prepare the citrus syrup by combining granulated sugar, water, and the zest and juice of both the lemon and orange in a saucepan. Bring to a boil, then simmer for about 10 minutes.
  7. Once the cake is baked, prick the surface with a skewer and pour the warm citrus syrup over it. Allow the cake to cool completely in the tin before transferring it to a serving plate.
