  • 1/2 cup milk
  • 3/4 cup chopped walnuts
  • 1/2 cup brown sugar (for glaze)
  • 1/4 cup unsalted butter (for glaze)
  • 2 tablespoons milk or cream (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch loaf pan and line with parchment paper.
  2. In a bowl, combine chopped dates with boiling water and 1/2 teaspoon baking soda. Let sit for 10 minutes.
  3. In a separate bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a large bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, then vanilla. Stir in date mixture.
  5. Gradually mix in the dry ingredients, alternating with milk. Mix until just combined.
  6. Fold in chopped walnuts and pour batter into the prepared pan. Spread evenly.
  7. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
  8. For the glaze: In a saucepan, combine brown sugar, butter, and milk. Bring to a simmer for 3–4 minutes. Remove from heat and stir in vanilla.
  9. Drizzle the glaze over the cooled cake. Let set before slicing and serving.
