For the Coffee Frosting:
- 200 grams (1 cup) unsalted butter, softened
- 300 grams (2 1/2 cups) powdered sugar
- 2 tablespoons brewed coffee, cooled
- 1 teaspoon vanilla extract
- 1 tablespoon cocoa powder (for dusting)
Instructions
- Preheat your oven to 180°C (350°F) and line a 15×10-inch jelly roll pan with parchment paper.
- Whisk together the eggs and granulated sugar until pale and fluffy, about 5 minutes.
- Sift together the flour, cocoa powder, baking powder, and salt in another bowl.
- Gently fold the dry ingredients into the egg mixture, then add the cooled coffee, vegetable oil, and vanilla extract.
- Pour the batter into the prepared pan and bake for 12-15 minutes.
- Let the cake cool in the pan for 5 minutes, then invert onto a powdered sugar-dusted towel and roll it up.
- Prepare the coffee frosting by beating the softened butter, then gradually adding powdered sugar, coffee, and vanilla until fluffy.
- Unroll the cooled cake, spread the frosting evenly, and roll it back up tightly.
- Refrigerate for at least 30 minutes, then dust with cocoa powder and garnish with chocolate shavings before serving.
