Ingredients

  • 100 grams (3/4 cup) all-purpose flour
  • 30 grams (1/4 cup) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 60 ml (1/4 cup) brewed coffee, cooled
  • 30 ml (2 tablespoons) vegetable oil
  • 1 teaspoon vanilla extract

For the Coffee Frosting:

  • 200 grams (1 cup) unsalted butter, softened
  • 300 grams (2 1/2 cups) powdered sugar
  • 2 tablespoons brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 15×10-inch jelly roll pan with parchment paper.
  2. Whisk together the eggs and granulated sugar until pale and fluffy, about 5 minutes.
  3. Sift together the flour, cocoa powder, baking powder, and salt in another bowl.
  4. Gently fold the dry ingredients into the egg mixture, then add the cooled coffee, vegetable oil, and vanilla extract.
  5. Pour the batter into the prepared pan and bake for 12-15 minutes.
  6. Let the cake cool in the pan for 5 minutes, then invert onto a powdered sugar-dusted towel and roll it up.
  7. Prepare the coffee frosting by beating the softened butter, then gradually adding powdered sugar, coffee, and vanilla until fluffy.
  8. Unroll the cooled cake, spread the frosting evenly, and roll it back up tightly.
  9. Refrigerate for at least 30 minutes, then dust with cocoa powder and garnish with chocolate shavings before serving.
