Instructions

  1. Prepare the Dough: In a large mixing bowl, combine flour, salt, and sugar. Add chilled butter and mix until it resembles coarse crumbs. Gradually add ice water until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least one hour.
  2. Prepare the Filling: In a mixing bowl, combine mixed berries and sliced peaches. Add sugar, cornstarch, vanilla extract, and lemon juice. Toss gently to coat the fruit.
  3. Assemble the Galette: Roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer to a parchment-lined baking sheet. Spoon the fruit filling into the center, leaving a 2-inch border. Fold the edges over the filling.
