Miso caramel cookies are a delightful twist on traditional cookies, combining the rich, savory flavor of miso with the sweet, gooey goodness of caramel.

- 3/4 cup brown sugar (packed, about 150 grams)
- 1/2 cup granulated sugar (about 100 grams)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour (about 240 grams)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup white miso paste (about 60 grams)
- 1/2 cup caramel sauce (store-bought or homemade)
- Sea salt (for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Fold in the white miso paste.
- Take a portion of the cookie dough, flatten it, and place 1 teaspoon of caramel sauce in the center. Wrap the dough around the caramel and roll it into a ball.
- Place the cookie balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are golden brown and the centers remain soft.
- Sprinkle sea salt on top of each cookie immediately after removing from the oven.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- To make gluten-free, substitute all-purpose flour with a gluten-free flour blend.
- For vegan cookies, replace the egg with a flax egg and use vegan butter.
- Store cookies in an airtight container at room temperature for up to 3 days.
- Freeze cookies for up to 3 months for longer storage.
