Description

Miso caramel cookies are a delightful twist on traditional cookies, combining the rich, savory flavor of miso with the sweet, gooey goodness of caramel.


Ingredients

  • 3/4 cup brown sugar (packed, about 150 grams)
  • 1/2 cup granulated sugar (about 100 grams)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (about 240 grams)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup white miso paste (about 60 grams)
  • 1/2 cup caramel sauce (store-bought or homemade)
  • Sea salt (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  6. Fold in the white miso paste.
  7. Take a portion of the cookie dough, flatten it, and place 1 teaspoon of caramel sauce in the center. Wrap the dough around the caramel and roll it into a ball.
  8. Place the cookie balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until the edges are golden brown and the centers remain soft.
  10. Sprinkle sea salt on top of each cookie immediately after removing from the oven.
  11. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
