Description

Mini Pillsbury Cookie Cheesecakes are individual creamy cheesecakes with cookie dough bases, topped with whipped cream and a cookie.


Ingredients

  • 1 (9 oz) package Pillsbury Pumpkin Shape Cookie Dough (20 pre-cut cookies)
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1/3 cup sour cream, room temperature
  • 1/2 tsp pure vanilla extract
  • 1 1/4 cups cold heavy cream
  • 1/4 cup confectioners sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with 10 liners. Arrange oven racks to upper and lower thirds.
  2. Place one cookie dough round in each muffin liner. Place remaining 10 cookies on a parchment-lined baking sheet. Bake both trays for 12–14 minutes, rotating halfway. Cool completely.
  3. In a large bowl, beat cream cheese and granulated sugar until fluffy (2–3 minutes). Add egg, sour cream, and vanilla, beating until smooth.
  4. Divide cheesecake filling evenly among muffin cups over the cookie bases.
  5. Bake cheesecakes for 16–18 minutes until set. Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours.
  6. Whip heavy cream and confectioners sugar together until stiff peaks form.
  7. Top each cheesecake with whipped cream and a reserved cookie. Serve chilled.

  • Do not overmix the batter after adding the egg to prevent cracks.
