Ingredients

- 1 unbaked pie crust
- 3 tablespoons unsalted butter
- 1/2 cup packed dark brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 3/4 cup chopped pecans
- Coarse sea salt or flaky sea salt for sprinkling
Instructions
- Prepare the pie dough ahead of time and chill in the refrigerator for at least two hours. Roll into a large 12-inch circle and cut out about 24 rounds using a cookie cutter.
- Grease a mini muffin pan and press each dough round into it. Refrigerate for 5-10 minutes, then bake at 325°F for about 7 minutes.
- In a bowl, whisk together brown sugar, egg, vanilla, nutmeg, and cinnamon. Fold in melted butter and chopped pecans.
- Spoon 1-2 teaspoons of filling into each crust and sprinkle with sea salt. Bake at 350°F for 16-18 minutes.
- Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Try toasting the pecans before adding them to enhance the flavor. These pies can be made a day in advance and stored in the refrigerator.
