Description

Ingredients

  • 1 and 1/2 teaspoons baking powder

  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/2 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • 3/4 cup pumpkin puree
  • 1/2 cup milk
  • For the coating:
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and generously spray a 24-count mini muffin pan with nonstick spray.
  2. In a large bowl, whisk together the flour, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In a separate medium bowl, whisk together the melted butter and brown sugar until smooth.
  4. Add the egg, vanilla extract, pumpkin puree, and milk to the wet mixture and whisk until combined.
  5. Pour the wet mixture into the dry ingredients and mix gently until just combined; do not overmix.
  6. Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 12–14 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for about 10 minutes.
  9. While cooling, mix the cinnamon and sugar for coating in a small bowl and melt the butter in another bowl.
  10. Dip each warm muffin in melted butter, then roll in the cinnamon sugar mixture to coat evenly.
