- 1 and 1/2 teaspoons baking powder

- 1 teaspoon ground cinnamon

- 1/4 cup unsalted butter, melted and slightly cooled
- 1/2 cup packed light or dark brown sugar
- 1 large egg, at room temperature
- 1 and 1/2 teaspoons pure vanilla extract
- 3/4 cup pumpkin puree
- 1/2 cup milk
- For the coating:
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and generously spray a 24-count mini muffin pan with nonstick spray.
- In a large bowl, whisk together the flour, baking powder, pumpkin pie spice, cinnamon, and salt.
- In a separate medium bowl, whisk together the melted butter and brown sugar until smooth.
- Add the egg, vanilla extract, pumpkin puree, and milk to the wet mixture and whisk until combined.
- Pour the wet mixture into the dry ingredients and mix gently until just combined; do not overmix.
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake for 12–14 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for about 10 minutes.
- While cooling, mix the cinnamon and sugar for coating in a small bowl and melt the butter in another bowl.
- Dip each warm muffin in melted butter, then roll in the cinnamon sugar mixture to coat evenly.
