Ingredients
- Cream cheese: 16 oz (2 packages, softened)
- Granulated sugar: 1/2 cup (100 g)
- Eggs: 2 large
- Vanilla extract: 1 teaspoon (5 ml)
- Graham cracker crumbs: 1 cup (about 100 g)
- Unsalted butter: 1/4 cup (60 g, melted)
- Fresh blueberries: 1 cup (150 g)
- Water: 1/4 cup (60 ml, for compote)
- Additional sugar: 2 tablespoons (25 g, for compote)
- Cornstarch: 1 teaspoon (optional, for thickening the compote)
Instructions
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Press about 1 tablespoon of this mixture into the bottom of each cupcake liner in a muffin tin. Bake for 5-7 minutes until lightly golden and let cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
- Pour the cheesecake filling over the cooled crusts in the muffin tin, filling each liner about 3/4 full.
- Bake for 18-20 minutes until the edges are set but the centers are slightly jiggly. Turn off the oven and leave the cheesecakes inside for an additional 10 minutes. Let cool to room temperature before refrigerating.
