Description
Chewy and rich Milk Chocolate Mocha Blondies infused with espresso and topped with a glossy glaze. A perfect dessert for coffee lovers and sweet tooths alike.

- 2 cups all-purpose flour, spooned and leveled
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted and slightly cooled
- 3 or 4 teaspoons espresso powder
- 1 1/2 cups packed light or dark brown sugar
- 1 large egg
- 1 egg yolk, at room temperature
- 1 tablespoon pure vanilla extract
- 8 ounces milk chocolate discs, chopped bars, or chips
- 1/2 teaspoon espresso powder (for glaze)
- 1 tablespoon warm water
- 3/4 cup confectioners’ sugar
- 1 tablespoon milk or heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9-inch square baking pan with parchment paper.
- In a large bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, whisk melted butter with espresso powder until dissolved. Add brown sugar and mix until combined.
- Add egg, egg yolk, and vanilla extract. Whisk until smooth and glossy.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in milk chocolate.
- Transfer batter to prepared pan and smooth the top. Bake for 30–35 minutes or until a toothpick comes out with moist crumbs.
- Cool completely in the pan before glazing.
- For glaze: Mix espresso powder with warm water. Whisk in confectioners’ sugar and milk/cream until smooth.
- Drizzle glaze over cooled blondies. Cut into squares and serve.
Notes
- Do not overmix the batter to keep blondies chewy.
- Use high-quality espresso powder for better flavor.
- Let blondies cool completely before glazing for best results.
- Can be stored at room temperature for 2–3 days or refrigerated for up to a week.
