Description

Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 3 or 4 teaspoons espresso powder
  • 1 1/2 cups packed light or dark brown sugar
  • 1 large egg
  • 1 egg yolk, at room temperature
  • 1 tablespoon pure vanilla extract
  • 8 ounces milk chocolate discs, chopped bars, or chips
  • 1/2 teaspoon espresso powder (for glaze)
  • 1 tablespoon warm water
  • 3/4 cup confectioners’ sugar
  • 1 tablespoon milk or heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9-inch square baking pan with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, whisk melted butter with espresso powder until dissolved. Add brown sugar and mix until combined.
  4. Add egg, egg yolk, and vanilla extract. Whisk until smooth and glossy.
  5. Pour wet ingredients into dry ingredients and stir until just combined. Fold in milk chocolate.
  6. Transfer batter to prepared pan and smooth the top. Bake for 30–35 minutes or until a toothpick comes out with moist crumbs.
  7. Cool completely in the pan before glazing.
  8. For glaze: Mix espresso powder with warm water. Whisk in confectioners’ sugar and milk/cream until smooth.
  9. Drizzle glaze over cooled blondies. Cut into squares and serve.
