Ingredients
- Fusilli pasta: 8 oz
- Cherry tomatoes: 1 cup, halved
- Cucumber: 1, diced
- Red onion: 1/2, finely chopped
- Kalamata olives: 1/2 cup, pitted and halved
- Feta cheese: 1/2 cup, crumbled
- Fresh parsley: 1/4 cup, chopped
- Olive oil: 1/4 cup
- Lemon juice: 2 tbsp
- Salt: to taste
- Pepper: to taste
Instructions
- Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- Prepare the vegetables: halve the cherry tomatoes, dice the cucumber, chop the red onion, and halve the Kalamata olives.
- Mix the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Toss gently.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
