A flavorful Mediterranean chicken marinade that enhances the taste and tenderness of chicken with fresh herbs, lemon, and olive oil.
Ingredients
- Olive oil: 1/2 cup (120 ml)
- Lemon juice: 1/4 cup (60 ml), freshly squeezed
- Garlic: 4 cloves, minced
- Fresh oregano: 2 tablespoons, chopped (or 1 tablespoon dried)
- Fresh thyme: 1 tablespoon, chopped (or 1 teaspoon dried)
- Fresh rosemary: 1 tablespoon, chopped (or 1 teaspoon dried)
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Red pepper flakes: 1/2 teaspoon (adjust to taste)
Instructions
- Gather your ingredients.
- Prepare the marinade by whisking together olive oil and lemon juice in a medium bowl.
- Add minced garlic, chopped herbs, salt, black pepper, and red pepper flakes to the bowl and mix well.
- Marinate the chicken by placing it in a resealable bag or shallow dish and pouring the marinade over it.
- Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4-6 hours or overnight.
- Preheat your grill or oven and cook the chicken until it reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before slicing and serving.
Notes
- For best results, use chicken thighs for juiciness.
- Marinate for at least 1 hour, but longer is better for flavor.
- Do not reuse marinade unless boiled to kill bacteria.
