Ingredients

  • Olive oil: 1/2 cup (120 ml)
  • Lemon juice: 1/4 cup (60 ml), freshly squeezed
  • Garlic: 4 cloves, minced
  • Fresh oregano: 2 tablespoons, chopped (or 1 tablespoon dried)
  • Fresh thyme: 1 tablespoon, chopped (or 1 teaspoon dried)
  • Fresh rosemary: 1 tablespoon, chopped (or 1 teaspoon dried)
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • Red pepper flakes: 1/2 teaspoon (adjust to taste)

Instructions

  1. Gather your ingredients.
  2. Prepare the marinade by whisking together olive oil and lemon juice in a medium bowl.
  3. Add minced garlic, chopped herbs, salt, black pepper, and red pepper flakes to the bowl and mix well.
  4. Marinate the chicken by placing it in a resealable bag or shallow dish and pouring the marinade over it.
  5. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4-6 hours or overnight.
  6. Preheat your grill or oven and cook the chicken until it reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for a few minutes before slicing and serving.
