  • 60 milliliters (1/4 cup) milk

  • 1 teaspoon baking powder
  • A pinch of salt
  • 200 milliliters (3/4 cup) heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • Fresh mint leaves (for garnish)

Instructions

  1. Gather all ingredients and ensure they are at room temperature.
  2. Whisk the eggs and granulated sugar together until pale and fluffy.
  3. Gradually add vegetable oil and milk, mixing until combined.
  4. Sift together flour, matcha powder, baking powder, and salt in a separate bowl.
  5. Fold the dry ingredients into the egg mixture gently.
  6. Pour the batter into a prepared jelly roll pan and spread evenly.
  7. Bake in a preheated oven at 180°C (350°F) for 12-15 minutes.
  8. Prepare the filling by whipping heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Remove the cake from the oven and cool in the pan for 5 minutes.
  10. Invert the cake onto a powdered sugar-dusted towel and roll it up with the towel.
  11. Let the rolled cake cool completely for about 30 minutes.
  12. Unroll the cake, spread the whipped cream filling, and roll it back up without the towel.
  13. Wrap the cake in plastic wrap and refrigerate for at least 30 minutes.
  14. Trim the ends, dust with powdered sugar, and garnish with mint leaves before serving.
