Instructions
- Gather all ingredients and ensure they are at room temperature.
- Whisk the eggs and granulated sugar together until pale and fluffy.
- Gradually add vegetable oil and milk, mixing until combined.
- Sift together flour, matcha powder, baking powder, and salt in a separate bowl.
- Fold the dry ingredients into the egg mixture gently.
- Pour the batter into a prepared jelly roll pan and spread evenly.
- Bake in a preheated oven at 180°C (350°F) for 12-15 minutes.
- Prepare the filling by whipping heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Remove the cake from the oven and cool in the pan for 5 minutes.
- Invert the cake onto a powdered sugar-dusted towel and roll it up with the towel.
- Let the rolled cake cool completely for about 30 minutes.
- Unroll the cake, spread the whipped cream filling, and roll it back up without the towel.
- Wrap the cake in plastic wrap and refrigerate for at least 30 minutes.
- Trim the ends, dust with powdered sugar, and garnish with mint leaves before serving.
