Ingredients

  • All-purpose flour: 500 grams
  • Unsalted butter: 250 grams (cold, for dough) and 100 grams (softened, for filling)
  • Active dry yeast: 10 grams
  • Granulated sugar: 50 grams
  • Salt: 10 grams
  • Milk: 200 ml (warm)
  • Water: 100 ml (warm)
  • Matcha powder: 30 grams
  • Sliced almonds: 50 grams (for topping)
  • Egg: 1 (for egg wash)

Instructions

  1. Dissolve the active dry yeast in warm water for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour, sugar, and salt. Add the yeast mixture and warm milk, mixing until a dough forms.
  3. Prepare the matcha almond filling by mixing softened butter with matcha powder until smooth.
  4. Once the dough has risen, punch it down and roll it out into a rectangle. Place the chilled butter block in the center, fold the dough over, and seal the edges.
  5. Roll the dough out again into a rectangle, fold it into thirds, wrap in plastic, and refrigerate for 30 minutes. Repeat this process two more times.
  6. Roll the dough out into a large rectangle, cut into triangles, place a small amount of matcha filling at the base, and roll them up tightly.
  7. Place the rolled croissants on a baking sheet, cover, and let them proof for about 1 hour.
  8. Preheat the oven to 200°C (400°F). Brush the croissants with beaten egg and sprinkle with sliced almonds.
  9. Bake for 15-20 minutes until golden brown and flaky. Allow to cool slightly before serving.
