A unique recipe for Matcha Almond Croissants that combines the rich, buttery goodness of traditional croissants with the earthy flavor of matcha and a delightful crunch from sliced almonds.
Ingredients
- All-purpose flour: 500 grams
- Unsalted butter: 250 grams (cold, for dough) and 100 grams (softened, for filling)
- Active dry yeast: 10 grams
- Granulated sugar: 50 grams
- Salt: 10 grams
- Milk: 200 ml (warm)
- Water: 100 ml (warm)
- Matcha powder: 30 grams
- Sliced almonds: 50 grams (for topping)
- Egg: 1 (for egg wash)
Instructions
- Dissolve the active dry yeast in warm water for 5-10 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour, sugar, and salt. Add the yeast mixture and warm milk, mixing until a dough forms.
- Prepare the matcha almond filling by mixing softened butter with matcha powder until smooth.
- Once the dough has risen, punch it down and roll it out into a rectangle. Place the chilled butter block in the center, fold the dough over, and seal the edges.
- Roll the dough out again into a rectangle, fold it into thirds, wrap in plastic, and refrigerate for 30 minutes. Repeat this process two more times.
- Roll the dough out into a large rectangle, cut into triangles, place a small amount of matcha filling at the base, and roll them up tightly.
- Place the rolled croissants on a baking sheet, cover, and let them proof for about 1 hour.
- Preheat the oven to 200°C (400°F). Brush the croissants with beaten egg and sprinkle with sliced almonds.
- Bake for 15-20 minutes until golden brown and flaky. Allow to cool slightly before serving.
