- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light or dark brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cups all-purpose flour, spooned and leveled
- 1/3 cup natural unsweetened cocoa powder
- 1/4 cup dry hot cocoa mix
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 2 teaspoons milk (any kind)
- 10–11 large marshmallows, cut in half
- 8 ounces semi-sweet chocolate, finely chopped
Instructions
- In a large mixing bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract; mix until combined.
- In another bowl, whisk together flour, cocoa powder, hot cocoa mix, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing on low speed. Add milk and mix until dough is smooth.
- Chill the dough in the refrigerator for at least 2 hours.
- Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
- Roll dough into 1.5-inch balls and place on prepared baking sheets, leaving space in between.
- Bake for 10 minutes, then press a marshmallow half into each cookie and bake for an additional 2 minutes.
- Cool on baking sheets for 10 minutes, then drizzle with melted chocolate and set to harden.
Notes
To enhance flavors, experiment with different cocoa powders or add spices like cinnamon.
