Description

Marry Me Chicken Orzo is a delightful dish that combines tender chicken, creamy sauce, and flavorful orzo pasta, perfect for romantic dinners or family gatherings.

Ingredients

  • Chicken Breasts: Two chicken breasts, about 1 lb (450 g)
  • Orzo Pasta: One cup (200 g)
  • Sun-Dried Tomatoes: Half a cup of chopped sun-dried tomatoes packed in oil
  • Garlic: Three cloves of minced garlic
  • Heavy Cream: One cup (240 ml)
  • Parmesan Cheese: Half a cup of grated parmesan cheese
  • Fresh Spinach: Two cups (60 g)
  • Olive Oil: Two tablespoons
  • Italian Seasoning: One teaspoon
  • Salt and Pepper: To taste

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. Heat olive oil in a large skillet over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and fully cooked.
  3. Remove the chicken and sauté minced garlic and sun-dried tomatoes in the same skillet for 1-2 minutes.
  4. Add orzo pasta and 2 cups of water or chicken broth, bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes.
  5. Stir in heavy cream and parmesan cheese until melted and creamy, then add fresh spinach and cook until wilted.
  6. Slice the cooked chicken and place it on top of the creamy orzo mixture, heat through, and serve.

Notes

  • Marinate the chicken for extra flavor.
  • Use fresh ingredients for the best taste.
  • Adjust creaminess by substituting heavy cream with half-and-half.
  • Stir frequently while cooking orzo to prevent sticking.
  • Experiment with additional vegetables for variety.
