  • Zest plus juice of 3 medium limes

Instructions

  1. Preheat the oven to 350°F (177°C) and line a muffin pan with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a bowl; set aside.
  3. Cream softened butter and sugar until light and fluffy, about 3-5 minutes.
  4. Add eggs and vanilla extract, beat until combined.
  5. Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry ingredients; mix until just combined.
  6. Stir in lime zest and juice; add tequila if using.
  7. Fill cupcake liners about 1/2 to 2/3 full with batter.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Optional: Brush warm cupcakes lightly with tequila right after baking.
  10. Cool cupcakes in pan for 10 minutes, then transfer to wire rack to cool completely.
  11. Prepare frosting by beating butter, then gradually adding confectioners’ sugar, tequila, vanilla, lime flavoring, and a pinch of salt until fluffy.
