Description

Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs, at room temperature
  • 1/4 cup full-fat sour cream, at room temperature
  • 1 tablespoon pure vanilla extract
  • 2/3 cup whole milk, divided and at room temperature
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon espresso powder (optional)
  • 4 ounces quality semi-sweet chocolate, finely chopped (for ganache)
  • 6 tablespoons heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar together until smooth, then add the vegetable oil, eggs, sour cream, and vanilla extract.
  4. Gradually add the dry mixture and 2/3 cup of milk, mixing until combined.
  5. Divide the batter and mix cocoa powder (and espresso powder if using) into one half.
  6. Layer the batters in the pan and create a marbled effect with a knife.
  7. Bake for 65-75 minutes until a toothpick comes out clean.
  8. Let it cool in the pan for 30 minutes before transferring to a wire rack.
  9. For the ganache, melt the chocolate and heavy cream together, then cool slightly before drizzling over the cake.

Notes

For a flavorful twist, consider adding a swirl of fruit curd or mixing in nuts.
