- 1 tablespoon pure vanilla extract
- 2/3 cup whole milk, divided and at room temperature
- 3 tablespoons unsweetened cocoa powder
- 1/2 teaspoon espresso powder (optional)
- 4 ounces quality semi-sweet chocolate, finely chopped (for ganache)
- 6 tablespoons heavy cream (for ganache)
Instructions
- Preheat the oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the butter and sugar together until smooth, then add the vegetable oil, eggs, sour cream, and vanilla extract.
- Gradually add the dry mixture and 2/3 cup of milk, mixing until combined.
- Divide the batter and mix cocoa powder (and espresso powder if using) into one half.
- Layer the batters in the pan and create a marbled effect with a knife.
- Bake for 65-75 minutes until a toothpick comes out clean.
- Let it cool in the pan for 30 minutes before transferring to a wire rack.
- For the ganache, melt the chocolate and heavy cream together, then cool slightly before drizzling over the cake.
Notes
For a flavorful twist, consider adding a swirl of fruit curd or mixing in nuts.
