  • 1/2 cup (120 ml) maple syrup
  • 1/2 cup (115 g) unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (60 g) walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas and mix in melted butter, maple syrup, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
  5. Fold in the chopped walnuts and additional maple syrup if desired.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
