Instructions
- Preheat your oven to 350°F (175°C). Peel and chop the sweet potatoes, then boil them for 15-20 minutes until tender. Mash until smooth.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a greased 9×13 inch baking dish and bake for 10 minutes.
- In a large mixing bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, ground cinnamon, ground nutmeg, vanilla extract, eggs, and salt. Whisk until smooth.
- Pour the sweet potato filling over the pre-baked graham cracker crust and spread evenly.
- Bake for 30-35 minutes until the filling is set and a toothpick comes out clean.
- Allow to cool completely, then refrigerate for at least 2 hours before serving. Dust with cinnamon before serving.

- Choose medium-sized, firm sweet potatoes for the best results.
- Adjust sweetness by adding more maple syrup or brown sugar if desired.
