  • 3 large eggs (to bind the filling)

  • 1 1/2 cups graham cracker crumbs (for the crust)
  • 1/2 cup unsalted butter (melted, to hold the crust together)
  • 1/4 cup granulated sugar (for the crust)

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and chop the sweet potatoes, then boil them for 15-20 minutes until tender. Mash until smooth.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a greased 9×13 inch baking dish and bake for 10 minutes.
  3. In a large mixing bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, ground cinnamon, ground nutmeg, vanilla extract, eggs, and salt. Whisk until smooth.
  4. Pour the sweet potato filling over the pre-baked graham cracker crust and spread evenly.
  5. Bake for 30-35 minutes until the filling is set and a toothpick comes out clean.
  6. Allow to cool completely, then refrigerate for at least 2 hours before serving. Dust with cinnamon before serving.
