Ingredients

  • Brown sugar: 1 cup (packed, 220 g)
  • Maple syrup: 1/2 cup (120 ml)
  • Buttermilk: 1 cup (240 ml)
  • Eggs: 2 large
  • Chopped pecans: 1/2 cup (60 g)
  • Unsalted butter: 1/2 cup (113 g, melted)

For the streusel topping:

  • All-purpose flour: 1/2 cup (60 g)
  • Brown sugar: 1/4 cup (packed, 50 g)
  • Ground cinnamon: 1/2 teaspoon
  • Unsalted butter: 2 tablespoons (28 g, cold and cubed)
  • Chopped pecans: 1/4 cup (30 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the wet ingredients: brown sugar, maple syrup, buttermilk, and eggs. Stir in the melted butter.
  4. Pour the wet ingredients into the dry ingredients and gently fold them together. Fold in the chopped pecans.
  5. Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a small bowl. Add cold butter and mix until crumbly, then stir in chopped pecans.
  6. Divide the muffin batter among the muffin cups, filling each about 2/3 full. Sprinkle the streusel topping over each muffin.
  7. Bake for 18-22 minutes or until a toothpick comes out clean. Let cool for 5 minutes in the tin before transferring to a wire rack.
