Ingredients
- All-purpose flour: 2 cups (240 g)
- Brown sugar: 1 cup (packed, 220 g)
- Pecans: 1 cup (chopped, 120 g)
- Maple syrup: 1/2 cup (120 ml)
- Butter: 1/2 cup (unsalted, softened, 113 g)
- Eggs: 2 large
- Baking powder: 2 teaspoons (10 g)
- Vanilla extract: 1 teaspoon (5 ml)
- Ground cinnamon: 1 teaspoon (2 g)
- Salt: 1/2 teaspoon (3 g)
Instructions
- Prepare the streusel topping by combining 1/2 cup of all-purpose flour, 1/2 cup of brown sugar, and 1/2 cup of chopped pecans with 1/4 cup of softened butter until it resembles coarse crumbs.
- Cream together the remaining 1/2 cup of softened butter and 1 cup of brown sugar until light and fluffy, then beat in the eggs one at a time and add the vanilla extract.
- In a separate bowl, whisk together the remaining 1 1/2 cups of all-purpose flour, baking powder, ground cinnamon, and salt. Gradually add this dry mixture to the wet mixture, alternating with the maple syrup.
- Pour the batter into a prepared cake pan, smooth the top, and sprinkle the streusel topping evenly over the batter.
- Bake in a preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Optionally, drizzle with a glaze made from powdered sugar and maple syrup before serving.
