Instructions
- Prepare the pudding mixture by soaking chopped dates in boiling water and adding baking soda. Let sit for 10 minutes.
- Cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time and mix well, then add vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with the soaked date mixture. Fold in chopped pecans.
- Pour the batter into a greased baking dish and bake at 180°C (350°F) for 25-30 minutes until a toothpick comes out clean.
- While the pudding bakes, prepare the toffee sauce by combining brown sugar, butter, and heavy cream in a saucepan. Bring to a gentle boil, then simmer for 5 minutes. Stir in vanilla extract and a pinch of salt.
- Once the pudding is baked, let it cool slightly, then serve with warm toffee sauce drizzled over the top and garnish with additional pecans.
