  • 100 grams (1/2 cup) unsalted butter: Softened
  • 150 grams (3/4 cup) brown sugar: Packed
  • 2 large eggs:

  • 1 teaspoon baking powder:
  • 1/4 teaspoon salt:
  • 100 grams (3.5 oz) pecans: Chopped, reserve some for garnish

For the toffee sauce:

  • 200 grams (1 cup) brown sugar:
  • 100 grams (1/2 cup) unsalted butter:
  • 250 milliliters (1 cup) heavy cream:
  • 1 teaspoon vanilla extract:
  • A pinch of salt:

Instructions

  1. Prepare the pudding mixture by soaking chopped dates in boiling water and adding baking soda. Let sit for 10 minutes.
  2. Cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time and mix well, then add vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with the soaked date mixture. Fold in chopped pecans.
  4. Pour the batter into a greased baking dish and bake at 180°C (350°F) for 25-30 minutes until a toothpick comes out clean.
  5. While the pudding bakes, prepare the toffee sauce by combining brown sugar, butter, and heavy cream in a saucepan. Bring to a gentle boil, then simmer for 5 minutes. Stir in vanilla extract and a pinch of salt.
  6. Once the pudding is baked, let it cool slightly, then serve with warm toffee sauce drizzled over the top and garnish with additional pecans.
