Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup pure maple syrup
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup pecans, toasted and chopped
  • ½ cup heavy cream
  • ½ cup caramel sauce
  • Extra pecans for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar in a bowl and mix until well combined. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes and let it cool completely.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and mix well.
  5. Slowly pour in the maple syrup while mixing. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and ground cinnamon.
  6. Toast 1 cup of pecans in a dry skillet over medium heat for about 5 minutes, then chop and set aside.
  7. Fold the chopped pecans into the cheesecake mixture and pour it over the cooled crust.
  8. Bake for 55-65 minutes until the center is set but slightly jiggly. Turn off the oven and let it cool gradually inside for about an hour.
  9. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  10. Whip the heavy cream until soft peaks form. Drizzle caramel sauce over the cheesecake, spread whipped cream, and garnish with extra pecans before serving.
