- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup pure maple syrup
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup pecans, toasted and chopped
- ½ cup heavy cream
- ½ cup caramel sauce
- Extra pecans for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar in a bowl and mix until well combined. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 8-10 minutes and let it cool completely.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and mix well.
- Slowly pour in the maple syrup while mixing. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and ground cinnamon.
- Toast 1 cup of pecans in a dry skillet over medium heat for about 5 minutes, then chop and set aside.
- Fold the chopped pecans into the cheesecake mixture and pour it over the cooled crust.
- Bake for 55-65 minutes until the center is set but slightly jiggly. Turn off the oven and let it cool gradually inside for about an hour.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Whip the heavy cream until soft peaks form. Drizzle caramel sauce over the cheesecake, spread whipped cream, and garnish with extra pecans before serving.
