  • ½ cup unsalted butter, chilled and diced
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 3 ripe pears, peeled, cored, and sliced
  • 1 cup pecans, halved
  • ½ cup maple syrup
  • ¼ cup brown sugar, packed
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the tart crust by mixing flour, sugar, and salt, then adding butter until crumbly. Stir in egg yolk and cold water, then refrigerate for 30 minutes.
  2. Make the filling by combining sliced pears, maple syrup, brown sugar, melted butter, cinnamon, and vanilla in a bowl.
  3. Peel, core, and slice the pears, then add them to the filling mixture.
  4. Preheat the oven to 375°F (190°C) and roll out the chilled dough to fit a 9-inch tart pan. Transfer the dough to the pan and prick the bottom.
  5. Pour the pear filling into the crust, scatter pecans on top, and bake for 25-30 minutes until the pears are tender and pecans are toasted.
  6. Allow the tart to cool for at least 15 minutes before slicing and serving.
