Ingredients

  • All-purpose flour: 2 cups (240 g)
  • Granulated sugar: 3/4 cup (150 g)
  • Baking powder: 2 teaspoons
  • Baking soda: 1/2 teaspoon
  • Salt: 1/2 teaspoon
  • Ground cinnamon: 1 teaspoon
  • Unsalted butter: 1/2 cup (115 g), melted
  • Maple syrup: 1/2 cup (120 ml)
  • Milk: 1/2 cup (120 ml)
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • Chopped pecans: 1 cup (120 g), plus extra for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by lining it with paper liners or greasing it.
  3. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, mix the wet ingredients: melted butter, maple syrup, milk, eggs, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and fold gently. Then, fold in the chopped pecans.
  6. Fill the muffin tin with the batter, about two-thirds full, and sprinkle extra pecans on top.
  7. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
