Delicious Maple Pecan Muffins that combine sweet maple syrup and crunchy pecans for a delightful treat.
Ingredients
- All-purpose flour: 2 cups (240 g)
- Granulated sugar: 3/4 cup (150 g)
- Baking powder: 2 teaspoons
- Baking soda: 1/2 teaspoon
- Salt: 1/2 teaspoon
- Ground cinnamon: 1 teaspoon
- Unsalted butter: 1/2 cup (115 g), melted
- Maple syrup: 1/2 cup (120 ml)
- Milk: 1/2 cup (120 ml)
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- Chopped pecans: 1 cup (120 g), plus extra for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your muffin tin by lining it with paper liners or greasing it.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix the wet ingredients: melted butter, maple syrup, milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and fold gently. Then, fold in the chopped pecans.
- Fill the muffin tin with the batter, about two-thirds full, and sprinkle extra pecans on top.
- Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

- Use pure maple syrup for the best flavor.
- Store leftover muffins in an airtight container at room temperature for up to three days.
- Freeze muffins individually wrapped for up to three months.
