A delightful cake that combines the sweetness of ripe pears with the rich flavor of maple syrup, topped with a crunchy streusel.

Ingredients

  • All-purpose flour: 2 cups (240 grams)
  • Ripe pears: 3 medium, peeled, cored, and sliced
  • Maple syrup: 1/2 cup (120 ml)
  • Brown sugar: 1/2 cup (100 grams), packed
  • Butter: 1/2 cup (115 grams), softened
  • Eggs: 2 large
  • Baking powder: 2 teaspoons
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/4 teaspoon
  • Rolled oats: 1/2 cup (45 grams)
  • Salt: 1/2 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. Cream together the butter and brown sugar until light and fluffy, then add eggs one at a time, followed by maple syrup.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the sliced pears into the batter.
  6. Prepare the streusel topping by mixing oats, brown sugar, flour, and butter until crumbly.
  7. Pour the batter into the prepared pan, sprinkle the streusel on top, and bake for 45-50 minutes.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

  • Choose ripe, sweet pears like Bartlett or Bosc for the best flavor.
