Ingredients
- Sweet potatoes: 1 cup, mashed (about 1 medium sweet potato)
- All-purpose flour: 1 ½ cups
- Baking powder: 2 teaspoons
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: ½ teaspoon
- Brown sugar: ¾ cup, packed
- Eggs: 2 large
- Milk: ½ cup
- Vanilla extract: 1 teaspoon
- Maple syrup: ½ cup (for glaze)
- Powdered sugar: 1 cup (for glaze)
- Salt: ¼ teaspoon
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potato, pierce it with a fork, and bake for 45-60 minutes until tender. Peel and mash it.
- In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, brown sugar, and salt.
- In another bowl, beat the eggs and mix in the mashed sweet potato, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently fold them together.
- Preheat your oven to 350°F (175°C) and grease your donut pan.
- Spoon the batter into the donut pan, filling each cavity about ¾ full.
- Bake for 10-12 minutes until golden brown and a toothpick comes out clean.
- Prepare the maple glaze by whisking together the maple syrup and powdered sugar.
- Once the donuts are cool, dip the tops into the glaze and allow excess to drip off.
