  • Sweet potatoes: 1 cup, mashed (about 1 medium sweet potato)
  • All-purpose flour: 1 ½ cups
  • Baking powder: 2 teaspoons
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: ½ teaspoon
  • Brown sugar: ¾ cup, packed
  • Eggs: 2 large
  • Milk: ½ cup
  • Vanilla extract: 1 teaspoon
  • Maple syrup: ½ cup (for glaze)
  • Powdered sugar: 1 cup (for glaze)
  • Salt: ¼ teaspoon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potato, pierce it with a fork, and bake for 45-60 minutes until tender. Peel and mash it.
  3. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, brown sugar, and salt.
  4. In another bowl, beat the eggs and mix in the mashed sweet potato, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and gently fold them together.
  6. Preheat your oven to 350°F (175°C) and grease your donut pan.
  7. Spoon the batter into the donut pan, filling each cavity about ¾ full.
  8. Bake for 10-12 minutes until golden brown and a toothpick comes out clean.
