Ingredients
- All-purpose flour: 2 cups (240 grams)
- Pumpkin puree: 1 cup (240 grams)
- Brown sugar: 1 cup (200 grams), packed
- Maple syrup: 1/2 cup (120 ml)
- Baking powder: 2 teaspoons
- Baking soda: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Eggs: 2 large
- Vegetable oil: 1/2 cup (120 ml)
- Salt: 1/2 teaspoon
- Optional: Chopped walnuts or pecans – 1/2 cup (60 grams)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- In a large mixing bowl, whisk together the dry ingredients.
- In another bowl, mix the wet ingredients until smooth.
- Combine the wet and dry mixtures gently.
- Divide the batter among the muffin cups and bake for 18-20 minutes.
- Prepare the maple glaze while the muffins bake.
- Glaze the muffins while they are still warm and allow to cool completely before serving.
Notes
- For best flavor, use pure pumpkin puree.
- Store muffins in an airtight container at room temperature for up to three days.
