- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup brown sugar
- 2 large eggs
- 1/2 cup maple syrup
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
- Sift together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt in a separate bowl.
- In a large mixing bowl, combine the pumpkin puree, brown sugar, eggs, and maple syrup, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently. Fold in walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the maple glaze by mixing powdered sugar and maple syrup until smooth.
- Once the loaf has cooled for about 10 minutes, remove it from the pan and drizzle the glaze over the top.
Notes
- Store leftovers in an airtight container at room temperature for up to three days.
- Refrigerate for up to a week or freeze for longer storage.
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend and add xanthan gum.
