  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  3. Sift together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt in a separate bowl.
  4. In a large mixing bowl, combine the pumpkin puree, brown sugar, eggs, and maple syrup, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently. Fold in walnuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Prepare the maple glaze by mixing powdered sugar and maple syrup until smooth.
  9. Once the loaf has cooled for about 10 minutes, remove it from the pan and drizzle the glaze over the top.
