Description

A delightful treat that captures the essence of autumn with moist pumpkin bars topped with a sweet maple glaze.

Ingredients

  • Pumpkin puree: 1 cup (canned or homemade)
  • All-purpose flour: 1 ½ cups
  • Brown sugar: 1 cup, packed
  • Eggs: 2 large
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: ½ teaspoon
  • Baking powder: 1 teaspoon
  • Baking soda: ½ teaspoon
  • Salt: ½ teaspoon
  • Maple syrup: ½ cup
  • Unsalted butter: ½ cup (1 stick), melted
  • Powdered sugar: 1 cup (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  3. In a separate bowl, whisk together the dry ingredients: flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. In a large mixing bowl, combine the wet ingredients: pumpkin puree, melted butter, brown sugar, eggs, and maple syrup. Whisk until smooth.
  5. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes.
  7. While the bars are baking, prepare the maple glaze by mixing powdered sugar with maple syrup until smooth.
  8. Once the bars are cooled, drizzle the maple glaze over the top.

Notes

  • For a nutty crunch, add chopped walnuts or pecans.
  • For a chocolatey twist, add chocolate chips to the batter.
  • Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
  • Freeze individual bars wrapped in plastic wrap for up to 3 months.
