Ingredients

- Brown sugar: 1 cup (200 g)
- Maple syrup: 1/2 cup (120 ml)
- Eggs: 3 large
- Vegetable oil: 1/2 cup (120 ml)
- Baking powder: 1 teaspoon
- Baking soda: 1/2 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Walnuts: 1/2 cup (chopped)
- Cream cheese: 4 oz (113 g), softened
- Powdered sugar: 1 cup (120 g)
- Additional maple syrup: 2 tablespoons (30 ml)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
- Mix the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine the wet ingredients: brown sugar, eggs, vegetable oil, and maple syrup.
- Incorporate the grated carrots and chopped walnuts into the wet mixture.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, checking for doneness with a toothpick.
- Prepare the cream cheese glaze by mixing softened cream cheese, powdered sugar, and additional maple syrup.
- Once the loaf has cooled, drizzle the glaze over the top.
