Description

Ingredients

  • 70 g granulated sugar
  • 225 g mascarpone cheese, softened to room temperature
  • 350 g whipping cream
  • 1 teaspoon vanilla extract
  • 30 ladyfingers
  • 150 g mango juice
  • 2 oz dark rum
  • 3 small mangoes, diced

Instructions

  1. Whisk egg yolks and granulated sugar until fluffy and pale yellow (3-5 minutes).
  2. Set up a double boiler; gently warm the egg mixture for 5-7 minutes while whisking continuously.
  3. Add softened mascarpone cheese to the warm egg mixture and whisk until smooth.
  4. In another bowl, whip heavy cream and vanilla extract to firm peaks; gently fold into the mascarpone mixture.
  5. Mix mango juice and dark rum; briefly dip ladyfingers into the mixture and arrange in serving container.
  6. Spread half the mascarpone cream over ladyfingers; layer diced mangoes on top.
  7. Repeat dipping ladyfingers, layering mascarpone cream, and diced mangoes.
  8. Cover and refrigerate for at least 6 hours or overnight to set and meld flavors.
