Instructions
- Whisk egg yolks and granulated sugar until fluffy and pale yellow (3-5 minutes).
- Set up a double boiler; gently warm the egg mixture for 5-7 minutes while whisking continuously.
- Add softened mascarpone cheese to the warm egg mixture and whisk until smooth.
- In another bowl, whip heavy cream and vanilla extract to firm peaks; gently fold into the mascarpone mixture.
- Mix mango juice and dark rum; briefly dip ladyfingers into the mixture and arrange in serving container.
- Spread half the mascarpone cream over ladyfingers; layer diced mangoes on top.
- Repeat dipping ladyfingers, layering mascarpone cream, and diced mangoes.
- Cover and refrigerate for at least 6 hours or overnight to set and meld flavors.
