Ingredients
- Biscoff cookies: 200 grams (about 1.5 cups, crushed)
- Unsalted butter: 100 grams (melted, about 7 tablespoons)
- Cream cheese: 400 grams (softened, about 14 oz)
- Powdered sugar: 100 grams (about 1 cup)
- Heavy cream: 200 ml (about ¾ cup)
- Mangoes: 2 ripe mangoes (peeled and sliced)
- Lime juice: 1 tablespoon
- Fresh mint leaves: for garnish
Instructions
- Preheat your oven to 180°C (350°F).
- Combine crushed Biscoff cookies with melted butter in a mixing bowl until it resembles wet sand.
- Press the mixture into the bottom and sides of a tart pan and bake for about 10 minutes. Let it cool completely.
- In a large mixing bowl, beat softened cream cheese until smooth, then gradually add powdered sugar.
- In a separate bowl, whip heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
- Spread the cream cheese filling evenly over the cooled crust.
- Toss sliced mangoes with lime juice and arrange them on top of the filling.
- Cover the tart with plastic wrap and refrigerate for at least 2 hours before serving.
- Garnish with fresh mint leaves, slice, and enjoy!
