- Fresh mango: 1 ripe, diced
- Fresh melon: 1 cup, diced
- Fresh lime juice: 2 tablespoons
- Simple syrup: 2 tablespoons
- Sparkling water: 1 cup (about 240 ml)
- Mint leaves: for garnish
- Ice cubes: as needed
Instructions
- Prepare the fresh melon by cutting it in half, scooping out the seeds, slicing it into quarters, removing the skin, and dicing it into small pieces.
- In a cocktail shaker, combine the diced mango and melon, then add the soju, fresh lime juice, and simple syrup. Use a muddler to gently mash the fruit.
- Fill the shaker with ice cubes, secure the lid, and shake vigorously for about 15-20 seconds.
- Strain the mixture into a tall glass filled with ice cubes, top with sparkling water, and gently stir. Garnish with reserved fruit chunks and mint leaves.
