  • Mint leaves: for garnish
  • Ice cubes: as needed

Instructions

  1. Prepare the fresh melon by cutting it in half, scooping out the seeds, slicing it into quarters, removing the skin, and dicing it into small pieces.
  2. In a cocktail shaker, combine the diced mango and melon, then add the soju, fresh lime juice, and simple syrup. Use a muddler to gently mash the fruit.
  3. Fill the shaker with ice cubes, secure the lid, and shake vigorously for about 15-20 seconds.
  4. Strain the mixture into a tall glass filled with ice cubes, top with sparkling water, and gently stir. Garnish with reserved fruit chunks and mint leaves.
