Description
Low carb fried rice is a delicious and healthy alternative to traditional fried rice, made with riced cauliflower instead of regular rice.
Ingredients

- 1 medium head of cauliflower (about 600g), riced
- 2 tablespoons sesame oil
- 2 green onions, chopped
- 1 medium carrot, diced
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- 2 large eggs, beaten
- 3 tablespoons soy sauce (or tamari for gluten-free)
- Black pepper, to taste
Instructions
- Prepare the cauliflower rice by removing leaves and stem, cutting it into florets, and pulsing in a food processor until it resembles rice grains.
- Heat sesame oil in a large skillet or wok over medium-high heat, then add green onions, carrots, and garlic. Stir-fry for 3-4 minutes.
- Add your choice of protein (cooked chicken, shrimp, or tofu) to the skillet and cook until heated through.
- Stir in the riced cauliflower and frozen peas, cooking for an additional 5-7 minutes until the cauliflower is tender and slightly golden.
- Pour soy sauce over the mixture, sprinkle with black pepper, and stir well to combine. Remove from heat and serve.
Notes
- Feel free to customize with your favorite vegetables and proteins.
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
- Reheat in a skillet with a splash of water or soy sauce to prevent drying out.
