Deliciously crispy loaded potato bites filled with cheese, bacon, and green onions.
Ingredients

- 4 medium potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, chopped
- 1/4 cup green onions, chopped
- 1/2 cup sour cream
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce potatoes with a fork.
- Bake potatoes for 45 minutes until tender.
- Allow potatoes to cool, then scoop out the insides.
- Mix potato insides with cheese, bacon, green onions, salt, and pepper.
- Fill potato skins with the mixture.
- Bake for an additional 15 minutes until golden.
- Serve with sour cream on the side.

- Use any cheese of your choice.
- Adjust bacon quantity based on preference.
