A delightful loaded mashed potato casserole that combines creamy mashed potatoes, sour cream, cheddar cheese, and crispy bacon bits, perfect for any gathering.

- 2 lbs (900 g) russet potatoes
- 1 cup (240 ml) sour cream
- 1 cup (100 g) cheddar cheese
- 1/2 cup (80 g) bacon bits
- 1/4 cup (60 ml) butter
- 1/4 cup (30 g) green onions
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Peel and cube the russet potatoes, then place them in a pot covered with cold water and a pinch of salt. Boil for 15-20 minutes until fork-tender.
- Drain the potatoes and return them to the pot. Mash until smooth, then mix in melted butter, sour cream, black pepper, and salt to taste.
- Fold in shredded cheddar cheese and bacon bits, reserving some for topping. Transfer the mixture to a greased 9×13 inch baking dish.
- Preheat the oven to 375°F (190°C). Sprinkle reserved cheese and bacon on top, then bake for 25-30 minutes until golden brown and bubbly.
Notes
- For a vegetarian option, omit bacon and add sautéed mushrooms or spinach.
- To enhance flavor, consider adding garlic powder or cream cheese.
- Store leftovers in an airtight container for 3-5 days.
- Can be frozen before baking for up to 2-3 months.
