Ingredients
- Ground beef: 1 lb (450 g)
- Diced potatoes: 4 medium-sized (about 600 g)
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Bell peppers: 1 cup, diced (any color or a mix)
- Shredded cheese: 1 cup (cheddar or your choice)
- Sour cream: 1/2 cup
- Olive oil: 2 tablespoons
- Salt: to taste
- Pepper: to taste
Instructions
- Prepare all ingredients by washing and dicing the potatoes, onion, and bell peppers, and mincing the garlic.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and cook the ground beef, seasoning with salt and pepper, for 7-10 minutes until browned.
- Remove the beef and add diced potatoes to the skillet, cooking for 10-15 minutes until golden brown and tender.
- Add sautéed onion and bell peppers to the skillet, cooking for 5 minutes, then add minced garlic and cook for another minute.
- Return the cooked ground beef to the skillet, mix well, and cook for an additional 2-3 minutes.
- Sprinkle shredded cheese over the mixture, cover, and cook for 2-3 minutes until cheese is melted. Drizzle with sour cream before serving.
