  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Bell peppers: 1 cup, diced (any color or a mix)
  • Shredded cheese: 1 cup (cheddar or your choice)
  • Sour cream: 1/2 cup
  • Olive oil: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Prepare all ingredients by washing and dicing the potatoes, onion, and bell peppers, and mincing the garlic.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat and cook the ground beef, seasoning with salt and pepper, for 7-10 minutes until browned.
  3. Remove the beef and add diced potatoes to the skillet, cooking for 10-15 minutes until golden brown and tender.
  4. Add sautéed onion and bell peppers to the skillet, cooking for 5 minutes, then add minced garlic and cook for another minute.
  5. Return the cooked ground beef to the skillet, mix well, and cook for an additional 2-3 minutes.
  6. Sprinkle shredded cheese over the mixture, cover, and cook for 2-3 minutes until cheese is melted. Drizzle with sour cream before serving.
