Instructions

  1. Prepare the artichokes by trimming and soaking them in lemon water.
  2. Heat olive oil in a large pot and sauté the chopped onion until translucent.
  3. Add minced garlic and cook for an additional minute.
  4. Add the artichokes and sauté for about 5 minutes.
  5. Pour in the vegetable broth and add thyme, then bring to a boil and simmer for 20 minutes.
