Ingredients
- Fresh artichokes: 4 medium-sized
- Vegetable broth: 4 cups (1 liter)
- Onion: 1 medium, chopped
- Garlic: 3 cloves, minced
- Lemon juice: 2 tablespoons, freshly squeezed
- Olive oil: 2 tablespoons (plus extra for drizzling)
- Fresh thyme: 1 teaspoon, chopped (or 1/2 teaspoon dried thyme)
- Salt and black pepper: to taste
Instructions
- Prepare the artichokes by trimming and soaking them in lemon water.
- Heat olive oil in a large pot and sauté the chopped onion until translucent.
- Add minced garlic and cook for an additional minute.
- Add the artichokes and sauté for about 5 minutes.
- Pour in the vegetable broth and add thyme, then bring to a boil and simmer for 20 minutes.
- Blend the soup until smooth and creamy.
- Stir in lemon juice and season with salt and pepper.
