  • Fish sauce: 2 tablespoons
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • Rice: 1 cup (jasmine or basmati recommended)
  • Mixed vegetables: 2 cups, chopped (such as bell peppers, carrots, and snap peas)
  • Olive oil: 2 tablespoons (for cooking)
  • Soy sauce: 2 tablespoons (for drizzling)
  • Lime wedges: for serving

Instructions

  1. Prepare the meatball mixture by combining ground pork, minced lemongrass, garlic, grated ginger, green onions, cilantro, fish sauce, salt, and black pepper in a large bowl.
  2. Shape the mixture into meatballs about 1 inch in diameter, aiming for around 20 meatballs.
  3. Heat olive oil in a large skillet over medium heat and cook the meatballs in batches for 6-8 minutes until golden brown and cooked through.
  4. Fluff the cooked rice with a fork and divide it among serving bowls.
  5. Top each bowl with sautéed mixed vegetables and place the cooked meatballs on top.
