- 2 1/2 cups store-bought lemonade
- 1 1/2 cups homemade or store-bought limoncello
- 1 1/2 cups homemade or store-bought lemon curd (divided)
Instructions
- Beat heavy cream and confectioners sugar until medium peaks form; do not overwhip.
- Mix mascarpone, lemon zest, and kosher salt until smooth; fold in one third of whipped cream, then fold in the rest to make lemon cream.
- Combine lemonade and limoncello; quickly dip ladyfingers in the mixture for no longer than one second.
- Arrange a layer of soaked ladyfingers in a 13 x 9 inch pan; spread half the lemon cream over them, then gently spread 1 cup lemon curd on top.
- Repeat with remaining soaked ladyfingers; spread remaining 1/2 cup lemon curd on top.
- Pipe remaining lemon cream in dollops over the top for decoration.
- Cover and refrigerate for at least 3 hours or overnight for best flavor.
- Before serving, sprinkle thinly sliced lemon zest on top.
