Description

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 23 tablespoons cold water
  • For the lemon filling:
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup freshly squeezed lemon juice (about 45 lemons)
  • Zest of 2 lemons
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine flour and sugar, then mix in chilled butter until it resembles coarse crumbs. Add egg yolk and cold water, then form the dough into a disk. Refrigerate for 30 minutes.
  2. Roll out the dough on a floured surface, then transfer it to a 9-inch tart pan. Press the dough into the edges, prick the bottom with a fork, and line with parchment paper. Fill with pie weights and bake for 15 minutes, then remove weights and bake for another 10-15 minutes until golden. Let cool.
  3. Whisk together sugar, eggs, lemon juice, and zest until smooth. Stir in heavy cream and vanilla extract. Pour the mixture into the cooled tart shell and bake for 20-25 minutes until the filling is set but slightly wobbly in the center. Cool at room temperature, then refrigerate for at least 2 hours before serving.
