Ingredients

- Milk: 1 cup (240 ml)
- Vegetable oil: ½ cup (120 ml)
- Lemon juice: ½ cup (120 ml)
- Lemon zest: 2 tablespoons (about 1 lemon)
- Whipped cream: 2 cups (480 ml)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In another bowl, beat the eggs and add the milk, vegetable oil, lemon juice, and lemon zest. Mix until smooth.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Pour the batter into the prepared baking pan and bake for 30-35 minutes, checking for doneness with a toothpick.
- Let the cake cool in the pan for about 10 minutes, then poke holes all over the top with a wooden spoon handle or skewer.
- In a small saucepan, combine the remaining lemon juice and granulated sugar, heat until the sugar dissolves, then pour over the poke holes in the cake.
- Let the cake cool completely, then spread whipped cream over the top.
- Garnish with additional lemon zest or lemon slices, slice, and serve chilled or at room temperature.
