Ingredients

  • Granulated sugar: 1 ½ cups (300 g)

  • Salt: ½ teaspoon (2.5 g)
  • Eggs: 3 large
  • Milk: 1 cup (240 ml)
  • Vegetable oil: ½ cup (120 ml)
  • Lemon juice: ½ cup (120 ml)
  • Lemon zest: 2 tablespoons (about 1 lemon)
  • Whipped cream: 2 cups (480 ml)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and add the milk, vegetable oil, lemon juice, and lemon zest. Mix until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Pour the batter into the prepared baking pan and bake for 30-35 minutes, checking for doneness with a toothpick.
  6. Let the cake cool in the pan for about 10 minutes, then poke holes all over the top with a wooden spoon handle or skewer.
  7. In a small saucepan, combine the remaining lemon juice and granulated sugar, heat until the sugar dissolves, then pour over the poke holes in the cake.
  8. Let the cake cool completely, then spread whipped cream over the top.
