  • Fresh cod fillets – 4 pieces (about 6 oz each)
  • Lemon juice – 2 tablespoons (freshly squeezed)
  • Parmesan cheese – 1/2 cup, grated
  • Garlic – 2 cloves, minced
  • Olive oil – 3 tablespoons
  • Breadcrumbs – 1/2 cup (preferably panko for extra crunch)
  • Salt – 1 teaspoon
  • Black pepper – 1/2 teaspoon
  • Fresh parsley – for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels and season both sides with salt and black pepper. Place in a lightly greased baking dish.
  3. In a mixing bowl, combine the grated Parmesan cheese, minced garlic, breadcrumbs, and remaining olive oil. Mix well.
