Ingredients
- Fresh cod fillets – 4 pieces (about 6 oz each)
- Lemon juice – 2 tablespoons (freshly squeezed)
- Parmesan cheese – 1/2 cup, grated
- Garlic – 2 cloves, minced
- Olive oil – 3 tablespoons
- Breadcrumbs – 1/2 cup (preferably panko for extra crunch)
- Salt – 1 teaspoon
- Black pepper – 1/2 teaspoon
- Fresh parsley – for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels and season both sides with salt and black pepper. Place in a lightly greased baking dish.
- In a mixing bowl, combine the grated Parmesan cheese, minced garlic, breadcrumbs, and remaining olive oil. Mix well.
- Drizzle lemon juice over the seasoned cod fillets and evenly distribute the breadcrumb mixture on top, pressing down gently.
- Bake for 15-20 minutes until the cod is cooked through and the topping is golden brown and crispy.
- Remove from the oven, let rest for a couple of minutes, garnish with fresh parsley, and serve with lemon wedges.
