Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, ground ginger, and salt.
- In a large bowl, beat eggs, oil (or butter), sugar, lemon zest, lemon juice, and vanilla extract until smooth and creamy.
- Gradually stir in the dry ingredients until just combined. Do not overmix.
- Fold in the diced pear and optional crystallized ginger.
- Pour batter into the prepared cake pan and smooth the top. Bake for 35–40 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar or drizzle with lemon glaze before serving, if desired.
