Lemon cheesecake hand pies are a delightful pastry filled with creamy lemon cheesecake.
Ingredients

- 1 package of pie crusts
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/4 cup lemon juice
- 1 tsp lemon zest
- 1 egg
- 1 tbsp cornstarch
- 1 egg wash (1 egg mixed with 1 tbsp water)
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crusts on a floured surface.
- Cut circles from the dough using a cookie cutter.
- In a bowl, mix cream cheese, sugar, lemon juice, lemon zest, egg, and cornstarch until smooth.
- Place a spoonful of the filling on one half of each circle.
- Fold the other half over and seal the edges with a fork.
- Brush the tops with egg wash.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
Notes
- Use fresh lemons for better flavor.
- Try adding a sprinkle of powdered sugar on top before serving.
- Store leftovers in the refrigerator.
