- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat oven to 350°F (180°C). Prepare a baking sheet with parchment paper.
- In a medium bowl, combine flour, baking powder, and salt. Set aside.
- In a larger bowl, beat together butter and cream cheese until fluffy (about 2-3 minutes).
- Add sugar to the mixture and beat until light and creamy. Then add the egg, lemon juice, lemon zest, and vanilla extract. Mix until combined.
- Slowly add the dry ingredients to the wet ingredients and mix until just combined. Avoid overmixing.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
- After chilling, scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
- To make the glaze, mix powdered sugar and milk until smooth. Drizzle over cooled cookies and allow to set for a few minutes.
