  • Lemon juice: 1/4 cup, freshly squeezed from about 2 lemons
  • Garlic: 3 cloves, minced
  • Fresh parsley: 1/4 cup, chopped
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • Capers: 1-2 tablespoons, rinsed and drained (optional)
  • Red pepper flakes: A pinch (optional)
  • White wine: 1/4 cup (optional)
  • Other herbs: Such as dill or thyme (optional)
  • Vegetables: Sliced zucchini or cherry tomatoes (optional)

Instructions

  1. Rinse the fresh cod fillets under cold water and pat them dry with paper towels.
  2. In a medium bowl, combine the melted unsalted butter and freshly squeezed lemon juice. Add minced garlic, chopped parsley, salt, and black pepper, and mix well.
  3. Preheat your oven to 400°F (200°C). Lightly grease a baking dish and place the cod fillets in a single layer.
  4. Drizzle the lemon butter sauce evenly over the cod fillets and bake for about 15-20 minutes until the fish is opaque and flakes easily with a fork.
