- Unsalted butter: 1/2 cup (1 stick or 113 g), melted
- Lemon juice: 1/4 cup, freshly squeezed from about 2 lemons
- Garlic: 3 cloves, minced
- Fresh parsley: 1/4 cup, chopped
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Capers: 1-2 tablespoons, rinsed and drained (optional)
- Red pepper flakes: A pinch (optional)
- White wine: 1/4 cup (optional)
- Other herbs: Such as dill or thyme (optional)
- Vegetables: Sliced zucchini or cherry tomatoes (optional)
Instructions
- Rinse the fresh cod fillets under cold water and pat them dry with paper towels.
- In a medium bowl, combine the melted unsalted butter and freshly squeezed lemon juice. Add minced garlic, chopped parsley, salt, and black pepper, and mix well.
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish and place the cod fillets in a single layer.
- Drizzle the lemon butter sauce evenly over the cod fillets and bake for about 15-20 minutes until the fish is opaque and flakes easily with a fork.
- Remove from the oven, let it rest for a couple of minutes, and serve hot, garnished with extra parsley and lemon wedges.
