Instructions

  1. Beat heavy cream with a handheld mixer until stiff peaks form. Transfer about 2 cups to a bowl and refrigerate.
  2. Fold lemon curd gently into the remaining whipped cream in the mixing bowl. Refrigerate.
  3. In another bowl, beat softened cream cheese and confectioners sugar until smooth and creamy.
  4. Add blueberry jam and fresh lemon juice to the cream cheese mixture; beat until combined.
  5. In a 13×9 inch baking dish, spread a thin layer of the cheesecake mixture.
  6. Arrange a single layer of Lemon Oreos over the cheesecake base.
  7. Spoon half of the lemon curd mixture evenly over the Oreos.
  8. Repeat layers: remaining Oreos, then the rest of the cheesecake mixture, followed by the remaining lemon curd mixture.
  9. Spread reserved whipped cream over the top.
  10. Cover with plastic wrap and refrigerate for at least 2 hours or overnight to set.
  11. Before serving, garnish with lemon zest and fresh blueberries.
